Recipe: Homemade Pizza Rolls for Kids

Mix up your kids’ school lunches with a fun, healthy twist on store-bought pizza rolls. Made with whole grains, veggies, and low-fat, protein-packed cheese, you can feel good about packing your kids “pizza” for lunch. These ready-in-10-minutes rolls are also a great dinner for hungry kiddos when you’re short on time after soccer practice or school play rehearsal. Enjoy!

Serves 1

INGREDIENTS:
  • 1 large whole wheat tortilla
  • 2 tablespoons marinara sauce
  • ¼ cup part skim mozzarella cheese, shredded

Optional:

  • ¼ cup ham or salami, finely chopped
  • ¼ cup red, yellow and/or orange pepper, diced
  • ¼ cup fresh spinach
DIRECTIONS:

For Enjoyment at Home:

  1. Preheat oven or toaster oven to 400°F.
  2. Spread sauce evenly over tortilla, leaving a 1-inch border around the outer edge.
  3. Sprinkle cheese and optional additional toppings evenly over sauce.
  4. Roll up tortilla, enclosing the fillings. Seal outer edge of tortilla with a few drops of water to prevent unrolling.
  5. Place in oven until cheese is melted (5-7 minutes).
  6. Slice into 6 to 8 rolls.

For Enjoyment at School:

  1. Follow steps 2-4 above.
  2. Slice cold tortilla into 6-8 rolls and pack in one of our reusable collapsible lunch containers.
  3. Remind kids to microwave their pizza rolls for 20-30 seconds, until cheese is melted, before enjoying the next day at school.

I tried these. My kids would not eat them. Even the dog left them in his dish.
No good.
